Quality starts with the grain
There is much more behind every bag of flour than simply milled grain. Quality depends on the harvest, the weather, the choice of raw materials and the precision of the production process. At Mlyn Kolárovo, there is one more important factor – an effort to process as much locally grown grain as possible.
What do you think about the Made in Slovakia project, and why did you decide to support it?
Slovakia has excellent conditions for growing wheat. Slovak farmers produce high-quality wheat, local mills turn it into high-quality flour and other milling products, and Slovak food producers use these ingredients to make quality local foods. We therefore consider it important to highlight the fact that there are companies in Slovakia that create jobs and added value while also processing commodities grown locally.
How did your story begin, and what inspired you to build the company specifically in Kolárovo?
Our company has been a family business from the very beginning. It was founded by my father, and it continues to operate as a family business to this day. We come from this region, and my father wanted to build a company here, create jobs and do business in the region we call home.
Regional grain is the foundation of your products. What criteria do you use when selecting growers and suppliers?
Slovakia has excellent conditions for growing wheat, and we try to source our grain primarily from the surrounding region while building long-term partnerships with local growers. This means buying from them regularly, year after year, so they have the reassurance that they can sell their harvest to us and that we have a long-term interest in buying it.
Naturally, we also closely monitor quality parameters. The milling industry relies on several specific quality indicators that are essential for producing flour that is both safe and of consistently high quality.
What is the biggest challenge in flour production that consumers do not see – variations in crop quality, weather, storage, energy or logistics?
As you mentioned, fluctuations in quality and changing weather conditions are major challenges. Every year is different. Some years are dry, while others bring completely different conditions, and this can have a significant impact on the quality of the harvest.
At the same time, our customers expect stable, consistent quality every year and every month. Our job is therefore to ensure that our products maintain a reliable and uniform level of quality over time.
Your flour is used in households, bakeries and food production. Do the requirements of individual consumers differ from those of large industrial customers?
Every customer is looking for high-quality, safe flour. The main difference is that industrial customers require much larger volumes, and every delivery needs to meet the same quality standards and specifications. Their requirements are therefore somewhat more specific.
It is also important to remember that industrial customers manufacture a wide variety of products – crackers, snack sticks, croissants, frozen goods and many others. Each product requires a slightly different type of flour with different characteristics, which means that the requirements vary from one customer to another.
Milling has a long tradition, but modern production also must meet today’s demanding standards. How do you combine traditional milling with new technologies?
The traditional technological principles and basic processes are, in essence, much the same as they were fifty years ago. The machinery, of course, is completely different today. We use the latest technologies available on the market and continuously modernise our production lines.
As a result, today’s products meet much higher standards in terms of quality, hygiene and food safety. Automation and robotics are far more advanced than they were in the past, helping us achieve more consistent product quality while also improving production efficiency.
Logistics also plays a major role today. We need to optimise both costs and logistics processes and automate them as much as possible. That is why we decided to build an automated high-bay warehouse, which allows us to streamline our logistics operations and speed up the entire process.
